- The facility was using a UV insect trap suspended above the two-compartment sink adjacent to the walk-in coolers.The UV insect trap was removed during the inspection.Please ensure insect traps are not installed in food handling, food preparation, or food storage areas. UV insect traps can cause insects to fall or disperse insect fragments, creating a potential source of food and surface contamination. Install insect traps in locations away from food handling activities while still allowing for effective pest control.

- At the time of the inspection, temperature monitoring was being recorded for refrigeration and freezer units; however, temperature monitoring taking place for cooking and hot holding of food items were not being recorded. *** Please ensure temperature monitoring for cooking temperatures and hot holding are being recorded. It is also recommended that sanitizer concentrations for the dishwasher and surface sanitizer be recorded ***

- During the time of the inspection, a towel was observed on the surface of a cooktop grill. Staff stated that this grill is not used but maintains residual heat from the pilot light and they use this heat to keep foods warm. Staff said that the towel is used to prevent plastic contains from melting and when questioned about the frequency of changing out said it could be days. The towel was observed to have spills and food debris on it that can transfer from container to container and from container to hands.*** Please ensure this towel is changed out every couple hours or sooner when visibly soiled. Foods stored in this location should also be included in the hot holding temperature monitoring records ***
