- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- The meat slicer had a garbage bag over the top of this machine, likely to keep it clean between uses.The garbage looked like it had been used for this purpose many times.Do not use garbage bags to cover food contact surfaces.Corrective ActionStaff removed the garbage bag, when this issue was identified.PHI recommended to use a clean sheet or towel to cover the meat slicer between uses.Note - once the clean towel or sheet has been removed, it is to be put into the laundry hamper and then a fresh towel or sheet is to be used to re-cover the appliance after it has been used, cleaned and sanitized.

- Operator does not have test strips for checking on concentration for bleach sanitizing solutions.Sanitizing solutions are to be checked on a periodic basis to ensure that they are mixed at proper concentrations of 200 ppm chlorine for wiping cloth pails and spray bottles of sanitizer.
