      • Obtain quat test strips so sanitizer strength can be tested.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • Some shelves throughout the kitchen are bare wood/particle board material, this is not easily cleanable. Ensure the shelves are resurfaced so they are smooth, non-absorbent to moisture and easily cleanable.
