    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The maximum temperature measured in the dishwashing machine is 131 C. This is inadequate as it must be at least 161 C.
      • Corrective Action: After washing dishware in the machine, immerse them in the 3 compartment sink in a bleach- warm water solution for 2 minutes at a chlorine concentration of 200 ppm. Then drain and air-dry the dishware.
