      • Observation (CORRECTED DURING INSPECTION): At the time of inspection pizza observed stored in the hot holding case. As per staff the pizza is picked up from the Canco Tilbury. Internal food product temperature 44-49 degrees C.
      • Corrective Action(s): Pizza was picked up at 12pm. To be discarded at 2pm. Ensure all hot potentially hazardous foods are displayed at or above 60 degrees C. Staff to begin proper documented time tracking for the display of pizza when displaying at or below 60 degrees C.

      • Observation (CORRECTED DURING INSPECTION): At the time of inspection no approved food contact surface sanitizer solution available for use.
      • Corrective Action(s): Ensure during operation a 100ppm bleach sanitizer solution is available for sanitizing food contact surfaces. Reminder to store all wiping cloths in this solution when not in use.
