- Observation (CORRECTED DURING INSPECTION): Dishwasher turned off and sanitizer buckets are empty. There are no back up sanitizer available. Operation has 2 compartment sink avaialble for manual warewashing and suffient supply of dishware to use
- Corrective Action(s): In the mean time, conduct manual warewashing at the 2 compartment sink until the chemical dishwasher can sanitize dishware. Ensure to always have an extra bucket of sanitizer available when dishwasher runs out of sanitizer. Operator produced a sanitizer solution at the 2 compartment sink measured at >100ppm

- Observation (CORRECTED DURING INSPECTION): Cooking utensils stored in water bath measured at 20.3C beside the stove units. Observed the chef using the utensils to cook food and placed back into water. Operator indicated that utensils were placed in water about 1 hour ago.
- Corrective Action(s): Utensils must not be stored in ambient temperature water bath as pathogenic growth can occur. Place all utensils in ice water bath to ensure temperatures are always <4C to prohibit any growth of pathogenic and reduce cross contamination onto cooked food/ready to eat food. Operator added ice into the water bath and temperatures are <4C
