      • PREVIOUSLY - Public areas have new floor tile, new ceiling tiles and freshly painted walls.Kitchen and food storage areas have new ceiling tiles, freshly painted walls and re-using existing floor tiles ( no changes to this flooring ).Please ensure that the wall at the mop sink is finished so that it is smooth, sealed and impervious to water. The wooden base for the mop sink, as it is currently bare wood, will need to be painted, to seal the wood.March 27, 2026 - the wall and base for the mop sink are still outstanding violations.Please have these corrected by April 30, 2026.April 20, 2026 - no change yet.

    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • For the 2 kitchen commercial range hoods - the set of filters do not cover the entire space across the interior of the range hood. This will allow grease laden vapors to travel the path of least resistance (which are the open gaps) and place more grease into the duct work and fan.If you are unable to find an additional filter for each hood, to fill these gaps, then you could have a stainless steel plate(s) custom made to fit the gaps that you have. This would force all grease laden vapors to pass through the filters then.

      • Plan to be using Quats based sanitizer from a chemical mixing station.Chemical mixing station not yet installed, waiting for parts.Note - EcoLab will be the supplier for cleaning chemicals and test strips.
