      • Observation: A carton of eggs is noted on the shelf above a tub of sour cream in walk-in cooler. Also milk in crates is noted on ground.
      • Corrective Action(s): Ensure all foods products are stored at least 6 inches above ground, and place potentially hazardous foods below ready-to-eat items.

      • Observation: Sink beside juice dispenser is classified by facility as a non handsink.
      • Corrective Action(s): This has been discussed with facility and written as a note on routine inspection report dated October 29, 2018. Approved floor plan has the sink designated as handwashing station, so facility cannot use this sink as anything but. Also, hot and cold running water, liquid handsoap, and paper towel must be present at the handwashing station. Access to this handsink must not be blocked (a wheeled cart of equipment is blocking access to this handsink). This was again discussed and written on the October 29, 2018 routine report.

      • Observation (CORRECTED DURING INSPECTION): Sanitizer bucket in main service dining area of main floor was determined to have less than 100 ppm of quat sanitizer solution. Operator at this station informs me the red bucket was filled with both detergent and sanitizer solution.
      • Corrective Action(s): Ensure all used quat sanitizer solution falls within the range of 200 ppm to 400 ppm in concentration for disinfection. Do not dilute or mix solutions. The red sanitizer bucket is labeled sanitizer solution only. Correction required immediately.

      • Observation (CORRECTED DURING INSPECTION): small containers of gravy in walk in cooler probed internally @ 39.5 deg. C. Gravy was placed in cooler 2.5 hrs ago as per operator.
      • -container of gravy was discarded. Potentially hazardous food (i.e. gravy) must be cooled from 60 deg. C to 20 deg. C in 2 hrs and 20 deg. to 4 deg. C in 4 hrs.
      • Place gravy in ice bath to cool quickly.

      • Observation (CORRECTED DURING INSPECTION): -the following foods were probed internally at each service counter Upright fridge:
      • Cardiff - Apple sauce @ 8 deg. C, Milk @ 6.5 deg. C
      • Bamfield - Peach Jam @ 5 deg. C, Milk @ 5 deg. C
      • Dawkins - Fruit lax, milk, fruit platter @ 5 deg. C
      • Ashton - Fruit lax @ 7 deg. C
      • Corrective Action(s): move the above noted items to the walk in cooler in the kitchen and other perishables.
