- Observation (CORRECTED DURING INSPECTION): Several food trays and a few soup buckets were stored covered in the cooler with tightly wrapped lids. Proper cooling cannot be achieved with this process. Foods must be cooled 60C to 20C within 2 hours and 20C to 4C within 4 hours. Operator mentioned that foods were stored in here 20 minutes to 1 hour ago. Foods must be cooled in multiple shallow containers and stirred frequently with ice wands. Cooling records must be recorded.
- Corrective Action(s): Foods stored above 20C for more than 2 hours must be discarded and foods that cannot meet the cooling time. Reheat products that cannot be cooled to above 74C and hold above 60C until the cooling process can be completed. All other foods must be cooled without tightly covered lids and the use of ice wands. Date to be corrected: immediately

- Observation (CORRECTED DURING INSPECTION): Two buckets of bleach sanitizer solution did not contain enough bleach (0 ppm and 50 ppm chlorine sanitizer was measured). 3 spray bottles was measured at above 200 ppm of chlorine.
- Corrective Action(s): Staff was instructed to make a bleach sanitizer solution at 100 ppm bleach. Chlorine sanitizer in the spray bottles were re-made and measured at 100 ppm bleach at time of inspection.

- Observation (CORRECTED DURING INSPECTION): A bucket of pickled jalapenos covered with plastic wrap had a hole in the plastic wrap and a pool of water was found on top. The bucket was stored below packages of raw red meat. It appeared that water was dripping from cooler above and landed on the bucket of jalapenos.

- Observation (CORRECTED DURING INSPECTION): 2 trays of sandwiches (deli meat) were noted being stored at room temperature in front sandwich prep area. Internal temperature of sandwiches measured 23.7C. Staff on duty reported sandwiches were assembled 1 hour earlier and was going to leave them out until they were picked up within an hour.
- Corrective Action(s): Potentially hazardous food must be maintained at 4C or colder. This practice is unacceptable. Once sandwiches are made/assembled, they must be transferred to the cooler. Staff directed to immediately transfer sandwiches to the cooler.
