      • Observation (CORRECTED DURING INSPECTION): Meat slicer observed with debris on the underside of the blade and guard. This is a repeat violation noted in report on June 6, 2025.
      • Corrective Action(s): Ensure you use a flashlight to verify cleaning has been properly done on the back side of the blade and on the guard as discussed.

      • Observation (CORRECTED DURING INSPECTION): Meat slicer observed with substantial old food debris affixed to both the guard and blade. Staff member cleaned and sanitized the slicer at time of inspection.
      • Corrective Action(s): Purchase proper scrubbing brushes/J cloths to access hard to reach areas on the slicer.
      • Ensure staff have been trained on how to properly clean and sanitize the slicer after use
      • Cover slicer after it has been cleaned to protect surfaces from food splatter.
      • Violation Score: 25

      • Observation: Magnetic strip observed not properly affixing knives.
      • Corrective Action(s): Replace magnetic strip with a new one as discussed.

      • Purchase chlorine test strips to verify that the concentration of chlorine is a minimum of 100ppm at the bakery warewashing sinks.
