- Cans of crushed tomatoes was observed (Lodge dry storage) to be dented. Damaged cans may compromise product integrity and pose a food safety risk. Please ensure dented cans are discarded and only canned goods in sound condition are stored and used.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Chlorine dishwasher in the lodge measured ~50 ppm, which is below effective sanitizing levels. The operator advised that they will contact the manufacturer/technician to re-calibrate the dishwasher to achieve proper sanitizer concentration prior to their next scheduled event.

- A gap at the back door (lodge) was noted, allowing light to enter. The operator was advised to install weatherproofing to ensure a tight seal and prevent pest entry.

- A light fixture in the T-bar storage area was missing a cover. This may pose a contamination risk in the event of breakage. Please install a cover or use shatter-resistant bulbs to prevent contamination.

- The following areas had grease build up and need to be cleaned: wall of shelving unit that is underneath lamp light and flooring underneath deep fryer. Temperature of Dasani mini cooler measured 17C-canned/bottle soda drinks are only stored in this unit. Discussed adjusting temperature and monitoring.

- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- A sanitizer spray bottle (lactic acid) in the kitchen tested no sanitizer. Line was flushed. Refilled bottle tested ok. Operator had strips.Sanitizers should be tested at least daily. Log sheets are advised. Tests could be included in opening duties.(The kitchens were about to close for the season.)

- IODOPHOR test strips not located for the T-bar glasswasher. There was no test history/log. Tests could be included in opening duties.(Glasswasher was not on. The kitchens were about to close for the season.)

- Dead mice were in several T-bar Orkin glue traps. However, the last service date was uncertain. The operator’s extra traps were all empty. Some Orkin glue boards needed refreshing; some mice were very old. Please: -Ensure all traps are monitored. -Provide pest control records from the next service. -Provide the advice from pest control operator consultation.-Watch for rodent activity closely and take action required.* The kitchens were about to close for the season.*

- Previous dropping clean-up was complete (cooler and table). Old droppings were also on a shelf beside a T-bar prep cooler (cleaned immediately).It is critical to always clean completely at the end of the night to discourage pests. Water and food left in dish sinks overnight will also attract pests.

- Mice were reportedly under control. The kitchen was thoroughly cleaned. Some equipment still needed to be moved to clean up droppings: the stainless table holding the microwave, and the shelves in the cooler.Wall holes in dish pit were closed. The wall hole in the furnace room contained droppings and should be sealed.Pest control technician should also be consulted for advice.

- Living and fresh mice were in traps in T-bar.Extensive measures were required immediately. The plan may include the following: - Increased pest control (e.g. more than traps (as appropriate), more site visits).- Complete clean including moving ALL equipment and decluttering (bar, dish pit, cooking equipment). Maintain the areas.- Seal rodent entry points and harborage points (e.g. wall holes in dish pit & furnace room, gaps in walls/baseboards, etc.).- Clean up all droppings and monitor for more rodent activity.**Increased enforcement such as a public health order may be issued.**
