      • Hot Holding of chicken wings found to be sitting around 40-45 degrees C operator had mentioned staff had cooked the wings roughly an hour ago. Wings may not have been cooked to proper temperatures. Wings were thrown out. Please ensure an internal temperature of precooked frozen wings reach a temp of 74 degrees C
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Permit will be mailed once approval to operate is granted.- Approval granted - Permit will be mailed.
