- Observation (CORRECTED DURING INSPECTION): 10 full gallons and 1 partial gallon of milk stored in prep cooler #3 had an internal temperature of 19C at the time of inspection. Cooler power was accidentally switched off while sweeping the floors. Last temperature reading for this cooler was at 8AM, measured to be 4C. The time of inspection was 1:15PM.
- Corrective Action(s): All milk jugs must be discarded, they have been temperature abused.
- Operator must look into a more appropriate set up for the power cord so that staff cannot accidentally switch off the power during regular cleaning.

- Observation (CORRECTED DURING INSPECTION): Sanitizer bucket for the front of the house (stored next to the cashier) measured 0ppm QUATS.
- Corrective Action(s): Refill the solution so that there is 200-400ppm QUATS. Allow the dispenser to fully mix so that the solution becomes cloudy before collecting in the bucket to use.
- Obtain QUATS test strips from chemical supplier. Check the concentation of the solution from the source at the start of the day, and each time the solution is refilled.

Only whole vegetables and fruits may remain in this cooler until it is serviced and a follow up inspection takes place. All coolers must be capable of maintaining an ambient temperature of 4C or colder.

- Observation (CORRECTED DURING INSPECTION): Observed staff washing and rinsing pots for brewing chai and putting them back onto the stove top for use without a sanitizing step. 2nd compartment used for sanitizing was filled with used dishes and equipment.
- Corrective Action(s): All equipmemt must be properly sanitized between uses. Fully submerge equipment in sanitizer solution for at least 2 minutes.
- The sanitize compartment must be clear at all times to allow sanitizing of equipment when needed.
