    • 302 - Critical Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) No active sanitizer detected in sanitizer spray bottles. Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface.
      • Corrective Action: Change sanitizing solutions as required to always maintain an effective concentration (200 ppm unscented bleach, 200 ppm QUAT).
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Evidence of mice; droppings were noted in the facility (on the wooden frame at entrance to the dish pit, below dishwasher, cupboard at the front end and around traps by refrigeration unit at the entrance to the kitchen). Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Clean and sanitize area where droppings are located and monitor situation.

      • Observation: 1. Observed build-up of soot and grease on fume hood. 2. Observed build-up of food debris and grease below the stove, on the wall behind the stove, the wall next to the second hand washing sink, the wall below the dishwashing area and along the edges of the floor below the dishwashing sink. Build-up of food debris and grease can act as a reservoir for bacteria and cross contaminate food.
      • Corrective Action: Operator to clean and sanitize fume hood, floors and walls.

    • 101 - Plans/construction/alterations not in accordance with the Regulation [s. 3; s. 4]
      • Observation: Observed covers missing from lights in dish washing area. Coverings protect glass from contaminating food if light were to shatter.
      • Corrective Action: Operator to add coverings to ensure adequate and safe lighting.
    • 209 - Food not protected from contamination [s. 12(a)]
      • Observation: 1. Inappropriate equipment is used as scoops for ingredients. - Scoop handles must be kept free from the product to prevent hand contact and contamination. 2. Observed flour stored in non food grade container.
      • Corrective Action: 1. Use food safe scoops (with handle) in place of bowls or other containers to transfer ingredients. 2. Flour should be stored in food grade container.
    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Evidence of mice; droppings were noted in the facility (inside cupboards at bar area and inside cupboards in front of kitchen). Rodents and other pests may cross contaminate foods and surfaces or contaminate human food with feces and urine, carry parasites and other diseases.
      • Corrective Action: Remove any pest attractants such as food and water, eliminate access to the building and routes they use inside. Clean and sanitize area where droppings are located and monitor situation.

      • Observation: 1. Observed build up of soot and grease on fume hood directly above food preparation area. Build up of soot and grease can potentially contaminate food and act as a resevoir for bacteria. 2. Observed mould build up, insects and mice poop in cupboard by chemical glass dishwasher. 3. Observed build up of mould and food by dishwashing area.
      • Corrective Action: 1. Operator to clean and sanitize fume hood. 2. Operator to clean and sanitize cupboard and clean and sanitize or replace door. Insects are to be removed and source eliminated 3. Clean mould and food debris by dish washing area.
    • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Hand wash sink is not functioning and being used to store items. Operator has another hand washing sink available.
      • Corrective Action: Operator to repair hand washing sink and ensure constant supply of potable running hot and cold water.

      • Observation: Food scoops stored in flour bins. Hand sink lacks soap and paper towel. Hand sink area very dirty. Some walls are very dirty
      • Corrective Action: Food scoops must be stored outside flour bins. Soap and paper towel to be supplied to sink area. Hand sink to be thoroughly cleaning Walls need a cleaning

    • 205 - Critical Repeat Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
      • Observation: (CORRECTED DURING INSPECTION) Potentially hazardous cold foods were observed being stored at 6.9°C (internal temperature of mayonnaise was taken) in th mid line cooler. (Public Health significance) - All potentially hazardous foods must be stored at below 4°C or above 60°C - out of the danger zone to prevent bacterial growth and possibly food borne illness
      • Corrective Action: Move potentially hazardous cold foods to working refrigeration units that maintain a temperature of 4°C or less, monitor and adjust the temperatures or have serviced, as required.
