- - Observed hot held braised meat items below 60C - around 43 - 50C.
- Corrective Action(s):
- - Operator confirmed that these were reheated in the pot before being transferred into the warmers. However, they have cooled down because the warmer itself was still not warmed up to 60C or above. Ensure that warmer is fully heated up before transferring hot food item. They can pour boiled water into the warmer compartment to speed up the heating process. All items were reheated at the time of inspection.

The food will cool down while waiting for the warmer to be heated up to 60C if the hot holding unit is not properly warmed up. - - Precooked wontons and bean sprouts observed in room temperature.
- Corrective Action(s):
- - Staff stated they were cooked 30 minutes ago. Temperature measured at 43C. They are precooked for lunch rush and they get sold out within 2 hours. Store is a busy store. However, the amount of pre-cooked wontons are too excessive. Ensure to reduce the number of precooked wonton boxes to half (10 boxes max.). Record the time they were cooked to track time. They should be discarded after 2 hours in ambient temperature.

- - Cockroaches observed on insect monitors. One dead one observed in the cabinet at the front.

- - Despite the strata pest control monitoring, cockroach activity is still observed. Improvement in sanitation and more frequent monitoring is required. Check traps every day to see activity and replace any traps that has caught cockroach.
