- Observation (CORRECTED DURING INSPECTION):
- 1. Low-temperature chemical dishwasher measured at 0 ppm chlorine concentration at plate surface after running the dishwasher 6 times. Staff member replaced sanitizer bottle and after 6 additional runs, the dishwasher measured at 50 ppm chlorine at the plate surface.
- 2. Bleach sanitizer in spray bottle measured at >>>200 ppm chlorine concentration. Staff diluted sanitizer which later measured at 200 ppm chlorine concentration.
- Corrective Action(s):
- 1. Obtain chlorine test strips to verify sanitizer strength (for both the dishwasher AND food contact surface sanitizer). Check dishwasher at least once per day (or as per approved sanitation plan) to ensure it is dispensing 50-100 ppm chlorine at the plate surface.
- 2. Prepare bleach food contact surface sanitizer at a concentration of 200 ppm by mixing 1/2-1 teaspoon of bleach with 1L of water. Bleach sanitizer at concentrations >200 ppm cause chemical contamination to surfaces and can contaminate food.

- Observation (CORRECTED DURING INSPECTION): Mechanical glasswasher/dishwasher not dispensing minimum level of chlorine sanitizer, even after priming the tubes.
- Corrective Action(s): Spoke to the owner on phone and confirmed the following:
- - Facility mostly serves drinks (95% of the total sales).
- - Facility will not serve any cooked food until approved by the health inspector. Until then, only drinks will be served. If to serve nonperishable snacks (i.e. chips) use single use plates/bowls, as agreed at this time. All glasses to be run through the glasswasher, soaked in 200ppm chlorine solution for 30 sec, and left to be air dried.

- Corrective Action(s): Operator discarded PHF foods (meat, cheese) and adjusted temperature control dial on the unit. Operator indicates he will also clean the air intake to ensure that the unit maintains a temp of 4 C or below.
