      • Observation (CORRECTED DURING INSPECTION): Rodent droppings observed under cutting board racks and next to immersion blender stored on bottom shelf of prep table in cook line area next to hand washing station. Staff stated they clean this area daily.
      • Corrective Action(s): Store all food contact surfaces stored on this shelf in an alternate location over night where mice cannot access them. Continue to clean and sanitize this area in the morning before any food contact surfaces are stored on this shelf for the day.

      • Observation: Grease accumulation observed on sides of equipment located under ventilation/exhause hood - Also underneath.
      • Area under dishwasher showed grease along walls and debris along edges of floor
      • Plastic film dispensers were not cleaned - debris on outside and inside of dispenser. Saran wrap is in food contact surface and therefore requires diligent washing and sanitizing of hits container/lid
      • Corrective Action(s): Clean these areas and increase the frequency of cleaning for these areas to ensure that grease/debris does not build up. It is a fire hazard concern as well as pest attractment.
      • The plastic dispenser must be cleaned and sanitized immediately and routinely cleaned until the new dispenser arrives.
