- Observation (CORRECTED DURING INSPECTION): Glass door prep cooler was measured at 7-10 deg C at the time of the inspection. Using the IR thermometer and multiple products (e.g. Kimichi) were measured. The calibrated probe thermometer was used to measure and placed inside the items. This probe thermometer was sanitized each time. Cooler temperatures were not dropping even after leaving the thermometer in product for extended period of time.
- Corrected During Inspection (CDI): After observing no change in cooler temperatures indicating any cooling down to the 4 deg C. Any potentially hazardous food items were discarded and other recently prepared products (indicated) were moved to one of the other working coolers. Other items prepared past the allowed time in the morning and before were discarded. Meat products were discarded and prepared sauces also discarded. Whole vegetables were moved to the working coolers. Operation did have 3 other coolers with space and these measured 4 deg C and colder at the time of the inspection. The operator agreed and had completed the corrective actions. This unit will not be used. Operator had called service tech and will have the unit serviced tomorrow Nov 20, 2025. Operator will not use this unit until EHO has verified it can maintain required temperatures.

- - Operator called service tech to repair this unit during the inspection. The operator must only use this unit once it maintains temperatures of 4 deg C or colder. At the time of the inspection all potentially hazardous food items were discarded and the unit not being used. Other nearby cooler unit was being used instead.

- 2. Boxes of shipment have came and just sitting on the floor.
- Corrective Action(s): 1. Do let keep so much fish at room temperature. Work on one tray at a time. This raw fish is served raw and must adhere to strict temperature control. Staff returned fish to cooler.

- 3. Observed two sanitizer spray bottles with 0ppm Quats. After discussion with operator, noted that a cleaner was inside the spray bottle - not sanitizer.
- Corrective Action(s): 1. Ensure sanitizer is prepared at all times in the kitchen at 200ppm Quats.
- 2. Operator stated that detergent and rinse aid are on order. In the interim, all dishes are pre-washed prior to putting them into the dishwasher. Rinse aid and detergent are to be on-site by follow-up inspection or a Correction Order will be issued.
