    • 304 - Premises not free of pests [s. 26(a)]
      • Observation: Drain flies noted on wall by mop hanger and bucket, under triple sink area, and coming out of the grease trap lid where the tightening bolt space is located. The grease trap should be tight fitting to prevent drain fly entry/exit for breeding process. Also noted some. Water noted on floor as well in these areas. The buckets used to capture dripping water are possibly an attraction, as is any damp linens.
      • Corrective Action(s): Make sure lid to grease trap is tight, any drain pipes are not leaking and ponding water is cleaned up daily. The use of any chemicals to buckets and drains, with hot water will help prevent breeding in these areas, but require daily attention to break the breeding cycle.

      • Observation (CORRECTED DURING INSPECTION): Quats hard surface sanitizer in spray bottle measured in excess of 500 + ppm. Proper food safe range is 200 ppm.
      • Corrective Action(s): Re-measured to 200 ppm. Make sure to develop a dosing system that makes it easy for staff to dilute quats to 200 ppm range.
