- The concentration of quat based food contact surface sanitizer available in a wiping cloth bucket in the front service area was undetectable. There was initially no wiping cloth bucket of food contact surface sanitizer available in the back food preparation area.Sanitizer solution in the wiping cloth bucket for the front service area was changed, and a wiping cloth bucket of sanitizer solution was prepared for the back food preparation area was prepared. Concentration for both measured 200 ppm. Ensure that sanitizer solution of an acceptable concentration is available in each food handling area at all times.
