- 09. Are chemicals stored and handled in a safe manner?
- Chemical storage was appropriate at the time of inspection. Chemicals were stored in the bottom storage compartment of the three compartment sink unit and were adequately separated from food and food contact surfaces. During the inspection, mouse poison was discovered in two cupboards used for large pot storage. The operator was advised that chemical rodenticides are not appropriate for use in a commercial kitchen. The poison was removed immediately during the inspection, and it was confirmed that there was no risk of food contamination. The facility will be using physical mouse traps only, along with ongoing monitoring, moving forward.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- Minor evidence of mouse activity was observed in several storage cupboards. Mouse traps are already in place and monitoring is ongoing. It was suggested that, following cleaning, a log be kept to track which cupboards show signs of activity in order to help identify points of entry. The operator also noted that a full deep clean of the kitchen is planned in the near future by the local 4 H group. Additional cleaning and sanitizing resources will be provided for reference. Plans are already in place to upgrade deteriorated exterior door weather stripping to improve pest exclusion.
