      • "Outstanding violation"-Written records were present for November 2025 only, many days were missed, then the record keeping was discontinued."Internal cooking temperatures of chicken and gravy were not verified, and no written records were maintained.Requirement:Ensure that cooking temperatures are verified using probe thermometer and written records are maintained.

      • The light above the cooking and preparation area was missing a shatterproof cover. Please install an appropriate cover.

      • "Outstanding violation" The temperature‑regulator knobs for most of the deep fryers were missing, and the operators were using a mechanical tool to control and adjust the temperature. This was discussed with a staff member, who showed text messages with the fryer company indicating that the replacement knobs are currently unavailable. The operator is advised to arrange for the appropriate replacement knobs as soon as possible.Temperature regulator switches on the deep fryers were broken.Requirement:Repair/replace the temperature regulator switches.

      • Splash guard located at hand washing sink in back prep area was detached and caulking was worn out..Requirement:Repair/replace splash guard and replace the caulking.

      • Shelf located under the counter in back area was rusted having rough surface.(Repeat violation from previous inspection)Requirement:Refinish the shelf to have smooth surface.

      • Concentration of chlorine was so high in sanitizer solution of spray bottle located in front prep area, that test strip faded immediately after dipping in the solution.Requirement:Overuse of chemicals on food contact surfaces will contaminate food. Ensure that concentration of chlorine is maintained at 100 ppm.

      • Chlorine test strips available on site were damaged and cannot be used to verify concentration of chlorine in the solution.Requirement:Provide new chlorine test strips.

      • No pest control records were maintained.Requirement:Maintain pest control records on monthly basis.

      • Shelf located under the counter in back area was rusted having rough surface.Requirement:Refinish the shelf to have smooth surface.

      • Interior frame of chest freezer and its lid located in back area were dirty and sticky.Requirement:Clean the chest freezer frame and lid.

      • Chlorine surface sanitizer solution was tested >200ppm. Spray bottle also did not work.- Ensure chlorine surface sanitizer solution is measured at 100ppm (1/2 teaspoon per 1 litre of water).- Replace the spray bottle if choose to use spray bottle.- Staff at time of inspection replace the solution in a bucket and was tested at 100ppm.

      • Fly strips placed above food prep/storage areas.- Remove fly strips and do not hang above any food prep/handling or food storage areas.

      • Bulk scoop bins (blue rubbermaids in back of house) were stored with handle touching the ingredients and one scoop was a broken plastic scoop.- Replace the broken scoop and ensure scoops are stored with handle facing up or in a separate clean food safe container to prevent potential contamination of ingredients.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • 1) Laminate covering for the below the counter cabinet for hand wash sink is peeling off.- Repair the cabinet door.2) Electrical socket cover missing behind the standing cooler at front of house.- Install the socket cover.

      • Accumulation of dust on the floor fan used when it gets hot inside.- Clean the fan and ensure regular cleaning is done if staff regular use the fan.
