    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Large quantities of bagged carrots and potatoes in paper sacks were stored directly on the ground (dirt/grass). PHI Boschee recommended that all food products be raised off the ground and/or stored in bins to protect from contamination.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No temporary hand wash station was available inside the food preparation area at the time of the inspection. Discussed the importance of hand washing and how to set up a temporary hand wash station with the food handler present. She indicated that they could use the temporary hand wash sink set up in the vicinity of the tent by the organizer.Food handler indicated that they would set up a temporary hand washing station inside the tent when they were next preparing food.
    • 22. Is the temporary food establishment properly constructed, configured and maintained?
      • The food preparation area did not have appropriate flooring - dirt/grass. Food preparation areas for events lasting longer than 1 day must have cleanable, non-porous flooring installed like finished plywood.
