      • -Keep open bulk foods in rodent proof containers (if they are small bags can put all into a large container)
      • -Remove damaged food cans from circulation and discard -ensure foods are inspected upon receiving

      • Observation: Some bowls/containers used for bulk foods in the main kitchen
      • Corrective Action(s): Use ladels (with handles) place outside of the bulk food into clean containers outside to better prevent workers from touching the food

      • 308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
      • Observation: Seals behind the sinks and counters in the dishwasher room have come undone -some mould buildup behind
      • Corrective Action(s): Clean the walls behind the sinks and reseal with caulking to better prevent water ingress there

      • Observation (CORRECTED DURING INSPECTION): Bakery production area is lacking utility sinks for food purposes -workers are using the present designated two handsinks there for that purpose. As well the two present handsinks are sized as utility sinks.
      • Corrective Action(s): Place two handsinks of suitable size next to the two present sinks (use for utility purposes once handsinks installed) in the bakery section (handsinks should be small in stature for handwashing only such as you have in the mechanical dishpit room).
      • A splashguard between the sinks will be needed if adjacent to each other
      • Operator to verify once the sinks are installed

      • Corrective Action(s): The sanitizer bucket/sprays need to be prepped first thing in the morning maintained at >200ppm QUAT residual -each food preparation station should have one

      • Corrective Action(s): Clean and sanitize surfaces as much as possible (no sticky surfaces -serves as food). Place additional mechanized traps where the flies are located -inform your pest control
