As my previous inspection repor, we only pemit a "PASSIVE" UV system which contains a "GLUE BOARD". Bug zapper unit was unplugged at time of inspection

- Corrective Action(s): Contact plumber to get the cold water supply to the Quat Dispensing unit plumbed back in so that Quat can be dispensed at 75F.
- Remove dust from the fins as the accumulation will affect the equipments ability to properly cold hold.

- Once repaired, confirm the unit is capable of cold holding at <4c before placing PHF's inside.

- Observation (CORRECTED DURING INSPECTION): Chicken stored in the very front portion of the open display hot holding unit at 55c. This was due to the temperature setting for the front heat bar not being set at the same temperature as the inner heat bars for this hot holding unit. Chicken stored further back inside the hot holding unit tested at >60c. Temperature of the front bar increased at time of inspection . Chicken in the front of the display reached 60c at time of inspection.
- Corrective Action(s): All temperature bars in the hot holding unit MUST be at the same setting to ensure all the chicken is bing properly hot held at >60c.
- Keep about 4 inches of separation in the front of the pans containing the chicken to ensure the chicken has the most coverage under the heat bars inside the hot holding unit.
