      • Corrective Action(s): Ensure the above-noted handsink is supplied with liquid soap, hot and cold running water, and either single-use paper towels or a functional hand air dryer to enable proper handwashing practices; Correct within 2 days, and provide an update to the Environmental Health Officer. Manager placed an out of order sign on the washroom door and locked the washroom as an interim measure, and informed the maintenance personnel will repair the hand air dryer by tomorrow. Manager re-stocked liquid soap at the above-noted handsink.

      • Observation: Walk-in-freezer (containing frozen food) was at -9 degrees C.
      • Corrective Action(s): Monitor the walk-in-freezer temperature, and maintain it at -18 degrees C or less; Correct within 2 days. Assistant Manager and area manager provided the following information: walk-in-freezer was assessed by a technician who did not find any issues with the equipment itself, there may be ice buildup requiring defrosting, and they will contact a technician to re-assess it.

      • Observation (CORRECTED DURING INSPECTION): Hot potentially hazardous food (deep fried chicken) was below 60 degrees C internal temperature at room temperature. Time-stamps were not in place. Assistant Manager informed restaurant opens at 7 AM, chicken is cooked beginning at 9:30 AM, they do not create time stamps during the morning time, and they only create time stamps in the afternoon when it becomes busier.
      • Corrective Action(s): Assistant Manager directed staff to create time stamps for the cooked chicken held at ambient temperature for up to 1 hour maximum from the cooking time in accordance with the food safety plan. Ensure time-tracking records are available in accordance with the food safety plan for hot potentially hazardous food held at ambient temperature throughout operation.

      • Ensure that ice scoop is always stored in a manner that protects ice from potential contamination (e.g. store in a designated holder or clean container). Do not store ice scoop in ice as handle may contaminate ice.

      • Health rationale: 0ppm QUATS concentration is not sufficient to adequately sanitize food contact surfaces in the kitchen. Microbes may survive and grow and/or produce toxins which cause foodborne illness.
      • Corrective action: Sanitizer solution in bucket with wiping cloths was replaced during inspection. Sanitizer was measured at 200ppm QUATS concentration. Ensure solution is changed more frequently to avoid inadequate sanitizing concentrations. Ensure solution is tested often and measured at 200ppm QUATS with test strip.

      • Observation (CORRECTED DURING INSPECTION): Rice in one hot-holding unit was below 60 degrees C (at 52 degrees C) for more than 2 hours.
      • Corrective Action(s): Aforementioned rice was discarded by staff member. A new batch of rice was being heated during the inspection. Ensure rice is hot-held at or above 60 degrees C to help prevent foodborne illness.

      • Observation: Flies were observed in the back storage area and near the dry storage area across from the ware-washing area.

Recommended: Install pest control devices (e.g. blue light or skicky traps) to help capture flies. Make sure any fly traps are however installed in areas that are not directly above food storage, equipment storage, or food preparation areas to protect food from contamination.
