      • The sanitizer container near the take-out window contains zero sanitizer residual. Discussed closing duties to include emptying sanitizer containers and having the buckets ready to be refilled for the morning shift.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • A container of mashed potatoes in the warmer drawer measured an internal temperature of 23.8 degrees Celsius. The drawer was just turned on and was preheating at 33 degrees Celsius. This container of mashed potatoes was from the previous night's shift and had not been discarded. Discussed closing duties to include discarding unsold food to prevent mixing up old food with the new food batch.

      • Large insert containers and lids are not adequately washed. Bins and lids contain grease and flour residual and food particles. Thoroughly clean dishes, sanitize, and put away dishes in clean storage.
    • 24. Is solid and liquid waste being managed in a suitable manner?
      • There is no garbage receptacle in the staff bathroom for discarding paper towel after hand washing. Provide a garbage container near the hand sink.
