      • Observation (CORRECTED DURING INSPECTION): One of the prep coolers in the deli had ambient air temperature measured at 8.7'C. The unit was used to store bottles of olives only. Manager was instructed to have all food transferred to downstairs walk-in cooler for now. Technician has been scheduled for Thursday.
      • Corrective Action(s): Ensure to have the unit repaired so that all cold potentially hazardous food are stored at 4'C or below at all times. Do not use the unit to store potentially hazardous food until repaired.

      • Observation (CORRECTED DURING INSPECTION): One of the coolers in the downstairs storage had dried pepperoni sticks stored above 4'C. Temperatures were ranging in between 8-9'C. Manager was advised to move all to the walk-in cooler at this time.

      • Observation: Droppings observed in the following areas:
      • > Around the dry goods shelves in the retail section, especially around the grains. Staff are already aware of this and have discarded any affected products.
      • > In the corner between the breads shelves and retail freezers.
      • > Under the dry rack on the left side of the 2 compartment sink.
      • Corrective Action(s): Remove droppings. Clean and sanitize these areas with a strong bleach solution. Frequent rotation of supplies in the retail section and storing dry goods on higher shelves may help to reduce the presence of rodents.

      • Observation (CORRECTED DURING INSPECTION): - In use wiping cloth being used to wipe cutting board had no sanitizer (bleach or quats) residual detected on it
      • - Bucket of in use wiping cloths had no sanitizer detected in solution
      • - One spray bottle with bleach sanitizer solution had to high concentration (>>200ppm chlorine)
      • Corrective Action(s): - Ensure sanitizer in use for food contact surfaces and in use wiping cloths is maintained at 100 to 200ppm chlorine. Use test strips to verify. Ensure all staff are trained.
      • - Corrective action completed at time of inspection: Bleach was added to bucket with in use wiping cloths and spray bottle with initially too high concentration was diluted. Manager to post signs to remind staff.

      • - Do not mix detergent and bleach. Sanitizer should only contain water and bleach. Other sanitizer bucket had 100ppm chlorine sanitizer. Ensure consistent instructions are given to all staff in regards to making bleach sanitizer.

      • Observation (CORRECTED DURING INSPECTION): Hand wash station in the sandwich making area was blocked by a large garbage bin at the start of inspection. The garbage bin was relocated to make the hand sink accessible but was returned in front of the hand wash station by the end of the inspection. This issue was noted on previous reports.
      • Corrective Action(s): Do not obstruct this hand wash station. If adequate hand wash stations are not available in this food preparation area, then food handling will not be permitted in this area. This food handling area has not be formally approved (ie. no floor plan submission).

      • Observation: Noted foods in the walk in cooler downstairs stored on the walk in cooler floor.

Staff member was observed washing meat slicer blade in one of the hand sinks in the deli meat section.
      • Corrective Action(s): Ensure hand wash stations are unobstructed and fully accessible at all times. Designated hand wash stations are to be used for hand washing purposes only.

      • Corrective Action(s): Do not mix soap with sanitizer solution. If cloths are greasy or dirty, then use a new clean cloth or clean the cloths separately with soap and water, rinse thoroughly so that all the soap is removed then store in the sanitizer solution.

      • Observation: Layout changes and installations have been made to the premises without health approval:
      • - Walk in cooler upstairs has been removed and the sandwich preparation area has been added to the end of the deli counter. A hand sink is located in this new food preparation/handling area. A new refrigerated olive bar with sneeze guards and soup wells have been added to the retail part of the store. No soup available at time of inspection.
      • - Hand sink has been installed without floor plan approval and proof of plumbing permits
      • - Broken tiles noted in the new sandwich preparation area. Operator advised that new tiles are being ordered.
      • - Access to the existing two compartment sink on site appears tight (approx 28 inches of clearance)
      • Corrective Action(s): Submit updated floor plans for health approval within 3 business days.

      • Observation (CORRECTED DURING INSPECTION): 1 pack of hard cheese and 1 pack of vacuum packed prosciutto in two door display cooler unit in sandwich prep area at 13.7C to be relocated to functional cooler unit.
      • Corrective Action(s): Operator to repair unit and do not use to store perishable foods unless able to maintain 4C or less. Develop a temperature log for cooler units.

      • Observation: A) Noted breads on display case cooler in ready to eat meat/cheese slicing area uncovered.
      • B) Noted boccini cheese being sold in small bulk food containers from cooler unit in retail area for customers to dispense themselves. Informed operator that bulk foods that are dispensed by customers are limited to non potentially hazardous foods only. Operator informed that they had worked with a previous inspector to have these bins made and were permitted to do this. File review will be conducted and discussed with Burnaby Health Protection Manager.
      • Corrective Action(s): A) Keep all foods exposed to customers covered.
      • B) Premises is to discontinue sale of potentially hazardous bulk foods (specifically, boccini) until further notice.

      • Observation (CORRECTED DURING INSPECTION): No quat sanitizer detected in the spray bottled designated for the cheese grater. Operator refilled spray bottled with quat sanitizer located at the cucina deli at time of inspection. Tested refilled spray bottled and confirmed 200ppm quat sanitizer.
      • Corrective Action(s): Ensure quat sanitizer is changed as needed to maintain minimum required concentrations to be effective. Ensure staff do not 'top off' the quat spray bottle with water as this will dilute the sanitizer. Test quat sanitizer at the cucina source to ensure the source is dispensing sanitizer of adequate concentration.
