     • Corrective Action(s): Wash and sanitize the surfaces to remove the dust and droppings. Increase the frequency these areas are being cleaned.

     • 1) The upper walls, near the loading door areas, have accumulated dust on them. This dust can fall into food.
     • 2) The interior surfaces of the exhaust canopies have accumulated food and dust on them. This dust can fall into food.
     • Corrective Action(s):
     • 1) Clean the walls and any other structure that has accumulated dust on it. Ensure these surfaces are cleaned on a regular basis.

The use of other materials (stainless steel, FRP, tiles, etc.) to cover the walls so they meet health standards is acceptable. Ensure the materials used are food grade, smooth, level, sealed, and cleanable.
