      • Noted bottles of concentrated QUAT sanitizer (red/pink) liquid in janitorial closet
      • Corrective Action(s): Operator must consistently have surface sanitizer for sanitizing food contact surfaces at 200 ppm QUATS that does not require a rinsing step after sanitizing. Operator must provide updated procedures for review by area inspector.

      • Observation (CORRECTED DURING INSPECTION): 2 issues:
      • -staff stated that the cutting board in the meat wrapping station is only cleaned with liquid soap and water (no sanitizing step)
      • -bandsaw was found to have meat debris build up in the blade housing and various parts of the machine
      • Corrective Action(s): Ensure that all food contact surfaces are cleaned and sanitized using an appropriate sanitizer solution. Bandsaw must be properly disassembled, cleaned, and disinfected after use.
