These materials are also not durable, not easily cleanable, and can lead to cross-contamination of food products.Ensure that no cloths, cardboard, or other porous materials are stored or used in the walk-in cooler or freezer. All food items must be stored on smooth, non-absorbent, durable, and easy-to-clean surfaces such as food-grade containers or plastic crates, shelving, or approved covers that can be washed and sanitized.
