      • Observation: Edges on the counter and the shelf with the public microwave had unfinished surfaces that are difficult to clean and can harbour microbes.
      • Corrective Action: Ensure that food surfaces including the edges of counters and shelving are finished such that they are impervious to moisture, smooth and easy to clean.

      • Corrective Action: Ensure that food surfaces including the edges of counters and shelving are finished such that they are impervious to moisture, smooth and easy to clean.
    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: (CORRECTED DURING INSPECTION) Raw eggs were being stored on torilla wraps in the upright cooler behind the entry door. Raw eggs need to be handled the same as raw meats as there is a higher contamination risk to ready to eat foods.
      • Corrective Action: The eggs were moved by the operator during the inspection. Ensure that raw eggs are stored below ready to eat food to prevent cross contamination.
    • 301 - Critical Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: The microwaves at the facility had dried on food debris inside, especially on the roof of the unit. Dried on food debris can harbour microbes and cause a fire. A cupboard in the back of the kitchen had drawers of utensils stored in a haphazard fashion so that the drawer was overcrowded and the utensils were not oriented in a manner that keeps the business end clean. Some of the utensils were worn out and the operator discarded them during the inspection. Overcrowded drawers cause difficulties in finding utensils in a manner that keeps them clean. Vent fan covers were found dusty in the public washrooms. Dusty fans can push dust onto patrons.
      • Corrective Action: Ensure that all parts of the microwave are cleaned and sanitized regularly. Ensure that the cupboards with utensils are not overcrowded and the items inside are arranged to keep them clean when retrieved from the drawer. Complete an annual inventory of kitchen equipment and remove and replace worn out items as necessary. Ensure that the vent covers and blades are cleaned regularly to prevent build-up.
