    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The quaternary ammonia sanitizing solution in the spray bottle was tested and the concentration was 50 ppm. Staff was instructed to discard the sanitizing solution and refill the spray bottle with a fresh quaternary ammonia sanitizing solution. The concentration of the fresh sanitizer was 200 ppm.Ensure QUAT sanitizer solution is at 200 ppm.
    • 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
      • Observed several open bags of flour that were not properly sealed in the dry storage area. Use either clips to tightly close open bags of flour or store the flour in food grade containers with airtight lids. Ensure food items are protected from contamination at all times.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • The food handling permit is posted in the kitchen area and was not visible to the public. Staff moved the food handling permit from the kitchen and posted it in the front area where it is now easily visible to the public. Ensure that the food handling permit is always displayed in a conspicuous place, where it is easily seen by persons being served.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • The staff washroom is located at the back of the kitchen and the washroom door was kept wide open. Staff was instructed to close the door. Ensure the staff washroom door is kept closed at all times since it opens directly into the kitchen.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • The lower level of the standing refrigerator has an accumulation of food crumbs. Ensure lower level of the refrigerator is thoroughly cleaned.

      • The ceiling above and around the oven has a significant buildup of dust.Ensure ceiling above the oven is thoroughly cleaned.
