      • Observation (CORRECTED DURING INSPECTION): Quat sanitizer dispenser at the two-compartment warewashing sinks was almost empty. Solution dispensed measured below 50 ppm. No refills were available onsite, however another Quat sanitizer dispenser (for filling bottles) was available for use and measured 200 ppm.
      • Corrective Action(s): Use your other Quat sanitizer dispenser for sanitizing equipment/utensils in the meantime, until your dispenser at the two-compartment sink is refilled. Ensure staff are using the test strips for monitoring the concentration of the sanitizer solution on a daily basis. Operator to have the dispenser at the two-compartment sink refilled. Ensure adequate supply is available at all times.
      • Alternatively, regular non-scented household bleach may be used as a food-contact surface sanitizer by mixing 1/2 teaspoon of bleach per litre of water for a concentration of 100 ppm.

      • Observation (CORRECTED DURING INSPECTION): Hand washing sink was obstructed (storing lids for bins) and not easily accessible for use.
      • Corrective Action(s): Hand sinks must be accessible/free of obstructions at all times. Staff cleared the hand sink at time of inspection.

      • - Food contact surfaces like tables were not in a sanitary condition.

      • Corrective Action(s): - Clean the dry food storage area.
      • - Thoroughly Clean adn sanitize the tables, the dough machines, the shelving units inside the coolers and freezers.
      • - Throughly clean and sanitize the proofer.

      • Observation (CORRECTED DURING INSPECTION): *Packaged food ingredients, paper towel rolls and other potential food-contact items were observed on storage shelves in the washroom, directly in front of the toilet. Staff state storage has been expanded into the washroom due to increased production, and a new cooler has been added in the main production room.
      • Corrective Action(s): Ingredient items moved during inspection. Ensure all food items are stored well away from the toilet. Do not store any unboxed/unpackaged items in the washroom.
