      • Observation (CORRECTED DURING INSPECTION): Sanitizer bucket had no detectable level of sanitizer in it. (See note on sanitizer dispenser)

      • Observation (CORRECTED DURING INSPECTION): 1. Found potentially hazardous baked goods room temperature holding with out accurate time tracking or discard records.
      • 2. Staff on duty unaware of importance of time tracking or discarding at the end of the time.
      • Corrective Action(s): 1.Must keep accurate time tracking of potentially hazardous foods and keep logs of number discarded at the appropriate time limit. This continues to be a repeat offense.
      • 2. Retrain all staff so they are aware of the importance of time tracking and discarding. FOODSAFE training may help.

      • 2. Ensure dispenser can dispense 200 ppm quats, manually prepare until repaired. Test strips onsite.
