      • Observation (CORRECTED DURING INSPECTION):
      • - Ambient temperature of potentially hazardous foods (e.g. raw fishes) stored in a display cooler in the kitchen measured at 11C. One of the raw fish probed at 6.5C. Probe thermometers x2 have been placed in the cooler for 15-20 minutes, fluctuating from 5C to 7C. Cooler was kept closed the whole time probe thermometers were placed inside.
      • Corrective Action(s):
      • - Staff noted previous EHO advised not to stack up too many containers of raw fish in the cooler to allow cold air to circulate in the cooler.
      • - Some of the foods were transferred into a walk-in freezer to make more space in the cooler. The cooler measured at 3.8C.
      • - Do not overstack food in the cooler. Adequate space must be maintained between items to allow for proper cold air circulation.
      • - Ensure to record temperature in a log regularly.

      • Observation (CORRECTED DURING INSPECTION): 1.Front of house - servers receive complaints about bleach use and QUATS has in the past caused skin issues therefore diluted Lysol disinfectant cleaner is used

      • Corrective Action(s): Ensure all food contact surfaces are sanitized by a sanitizer that does not require a final rinse step. Non-rinse sanitizers are required for food contact surfaces in a restaurant setting.
      • Bleach solution at 100-200 ppm chlorine or QUATS solution (pinkish/red liquid) at 200 ppm QUATS are both approved and non-rinse sanitizers that can be tested with test strips for concentration levels.
