      • Observation (CORRECTED DURING INSPECTION): 2 jugs of cream water, 1 jug of cheese foam, 1 jug of milk tea, and 1 carton of cream stored in this cooler measured above 4C. THIS IS A REPEAT VIOLATION
      • Probed cream water (made this morning): 14C, cheese foam (made yesterday): 10C.

      • Observation (CORRECTED DURING INSPECTION): Yakult (yogurt drink) bottles stored in the standup cooler had an internal temperature of 6.1C. They have been stored in this cooler overnight. Other potentially hazardous food items that were prepared today (fresh taro, milk) have also been moved.
      • Corrective Action(s): Staff moved all potentially hazardous foods to the working prep cooler.

      • Observation: Cleaning of the floors is required in the back of the facility by the walk-ins. There is water accumulating on the ground both inside and outside of the walk-in door. The floor-wall junctions under the dry storage racks appear to have black grime or mould growth as a result of moisture accumulation.
      • Corrective Action(s): Clean and sanitize this area. Locate the source of the water accumulation. Keep the floors as dry as possible througout the day, especially overnight.
