      • Observation (CORRECTED DURING INSPECTION): Reviewed Manual Dishwash Method with both workers -one worker indicates he simply rinses the soiled dishes then places it in the sanitizer

      • Step 1 - wash with warm water and detergent
      • Step 2 - rinse thoroughly
      • Step 3 - sanitize with bleach >100ppm chlorine residual then air dry
      • Ensure all new workers are properly trained according to the approved Sanitation Plan of your establishment

      • Do not store foods above the fill-line of the insert level in the preparation cooler -the fill-line is the indented line in the insert containers.

      • Corrective Action(s): Do not store foods directly under sinks as the pipes have a tendency to leak non-potable water
      • Place a sign there as a reminder
      • Continued infractions will require increased enforcement such as ticketing
