    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Wiping cloths were not being stored in a sanitizing solution. Cleaning cloths were observed on food preparation surfaces in the kitchen. The operator corrected and submerged the wiping cloth into a bucket pail of 100ppm chlorine/bleach sanitizer solution during the inspection.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • The handwash sink is very far from the food prep area. The one along the cooking line had been obstructed by the rice cooker.Ensure to have easy access to a handwash sink closer to the cooking line as discussed.
    • 19. Does the facility have a valid permit and does the facility operate in compliance with the conditions of that permit, or is the facility awaiting approval prior to operation?
      • Food permit on display is expired.Ensure to print out the valid permit for display.
    • 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
      • Extreme and heavy build up of grease noted on canopy grates. Operator had a professional company scheduled to do the cleaning this weekend.Increase to a biweekly cleaning schedule, or as needed.
    • 23. Is the facility maintained in a clean and sanitary condition?
      • PHI observed lots of recyclable bottles and cans stored in the dry food storage area.Ensure to clean and remove the empty bottles and cans from the dry food storage area.
