- 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:
(b) adequately designed and appropriately located hand-washing facilities;
- The hand washing stations in the food preparation areas must be stocked with the necessities for proper hand washing during food preparation. The hand washing station in the bakery and in the deli did not have paper towel in the dispenser.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- The areas that need to be addressed are: The pork display rack has minor mold growth on the shelving. The floor of the seafood cooler in the receiving area needs to be cleaned. The floor of the deli area beneath the ovens needs to be cleaned. The ceiling of the dairy receiving refrigerator needs to be cleaned.
