      • Foods in prep cooler were to hi to properly maintain temperature of top layer of foods. Operator told inspector they don't keep for very long before the top layer is used. Operator changed procedures.

    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • The quats sanitizer, in the sanitizer bucket, was 50ppm. This was corrected at the time of inspection. Please ensure that the quats sanitizer concentrations are maintained between 200ppm-400ppm for effective disinfection of food contact surfaces.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • One of the prep cooler temperatures was 10°C. The staff reported that the cooler had recently been cleaned and was frequently opened in the last hour. The top of the prep cooler was closed to allow the temperatures to decrease. The temperature decreased below 4°C at the time of inspection.
