- 2) Red sanitizer bucket had 0 ppm QUATS concentration.
- Showed this to staff member during inspection
- Corrective Action(s): 1) Staff member repaired dishwasher, it was able to achieved 50 ppm chlorine residual after priming the sanitizer line. Staff need to use test strips to check that the dishwasher is functioning at least twice a day.
- 2) Staff member refilled the red bucket with fresh sanitizer for the rags. Sanitizer was at 200 ppm QUATS after refill. Staff need to use test strips to check the concentration regularly (and/or change the solution more frequently)
