      • Observation: Mildew was observed along the sides of the interior of the ice machine.
      • Corrective Action(s): Discard ice, clean and sanitize the interior of the ice machine with a bleach solution. Ensure that the interior of the ice machine is cleaned and sanitized regularly.

      • Observation (CORRECTED DURING INSPECTION): 1. Observed one container of pooled eggs prepared for next day service.
      • 2. In-use utensils were stored in room temperature water.
      • 3. Raw meat was stored on top of ready to eat foods in the walk in cooler.
      • Corrective Action(s): 1. Eggs must only be pooled just prior to cooking. Do not store pooled eggs, and all batches of pooled eggs must be used as soon as they are pooled.
      • 2. Staff was instructed to store in-use utensils in ice water, and replace once ice has melted.
      • 3. Ensure that raw meats are stored separately from ready to eat foods.
