    • 19(3) A food establishment must have lighting, ventilation, heating, refrigeration and plumbing that is appropriate to the specific activities of the food establishment and that is considered acceptable by the Minister.
      • Lighting levels in all 3 walk-in coolers is too low measuring well below 110lux. Upgrade lighting in all walk-in coolers.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Cleaning required under shelving in the walk-in freezer.

    • 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:  (c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
      • Clean equipment/utensils left to dry on towels. Equipment/utensils must be left to air dry on a smooth, non-absorbent and easily cleanable surface. Towels were removed from under Equipment/utensils.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • Cleaning required in the dairy walk-in cooler as well as electrical wires above cooking line.
