      • 1. Floors are bulging and in disrepair in the kitchen. 2. A couple of tiles are in disrepair in one of the walk-in coolers. 1-2. Replace or repair the floors and ensure all floors are smooth, durable, and easily cleanable and install as per Alberta Safety Codes requirements.Store manager indicated plans are in place to repair the floors in the kitchen. 3.       • Packaged raw pork is stored beside vegetables. Ensure raw meat such as pork is stored below produce, or ready-to-eat foods. The Store Manager moved the vegetables at the time of the inspection.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • 1. The hot holding unit is noted at 54 degrees Celsius. 1. Ensure the hot holding units are at 60 degrees Celsius or above. Document the hot holding temperature on a temperature log. The stored manager increased the hot holding temperature at the time of the inspection at it measured above 60 degrees Celsius.2. Cooked ribs are noted at 12.3 degrees Celsius. 2. Ensure high-risk food are maintained at, or below 4 degrees Celsius or at, or above 60 degrees Celsius. Staff moved the ribs into the fridge at the time of the inspection.

      • Facility is working outside of permit restrictions, as soup is being sometimes prepared, cooled, and reheated and served the following day, resulting in extensive food handling. The facility is permitted as Food Class 2 - intermediate food handling only.Work within the permit restriction or, alternatively change the facility classification to Food Class 3 - extensive food handling. Ensure all food permit restrictions are met as per the food permit.Intermediate food handling means foods are cooked to order, hot holding and cold holding are restricted to single meal service. Extensive food handling means the handling, thawing, cooking, cooling, and reheating of high-risk food products.
