- Bleach or another approved sanitizer should be available in the kitchen. All food handlers should be sanitizing counter tops before beginning any food preparation as you do not know what/who was in the kitchen before and what was placed on the counters i.e. purses etc.Vinegar was observed underneath the sink at the time of inspection, but I did not observe any bleach.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- The walk in cooler had an elevated temperature at the time of inspection. However, staff advised they had just turned the cooler on (cake was in the cooler) and it may take some time to adjust. I recommend a temperature log for this unit.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- The handwash sink as you enter the kitchen from the parking lot did not have the water turned on? Not sure why this has been turned off but all of the sinks should be operating as intended.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- There was a few mouse droppings observed in the storage closet in the bar area. The styrofoam cups next to the droppings were discarded at the time of inspection. You may want a plastic container to store extra disposable items in to protect them from potential contamination. Please thoroughly clean this cupboard and sanitize the shelves. I recommend a trap in this closet as well and continued pest monitoring.
