      • Observation: - Duct tape sealing stainless steel and floor joints along bottom counter edges is peeling off. Steel wool and opening/ gaps under counters are exposed.
      • Corrective Action(s): - Remove duct tape. Seal stainless steal and floor joints along bottom counter edges. Seal holes/ cracks/ gaps larger than 1 square cm to prevent pest entry.
      • **Duct tape was a temporary solution when school was in session; however, school was closed July and August for summer break. A permanent solution is required. Duct tape is only a very temporary solution.**
      • **Work with school administration, custodian, and pest control management company to agree on a permanent solution.

      • - Thoroughly clean the premises shortly after food production is complete for the day. Do not allow food debris and grease to accumulate for long periods as open food debris and grease will attract rodents to the area.

      • - Communicate and coordinate with pest control service technician and school administration/ custodian regarding implementing additional pest control measures.

      • Note: Operations Manager (OM) on-site at time of inspection. OM stated that they are aware of problem and had reported rodent problem in dry storage room to school principal upon discovery. OM took corrective actions by removing all products from dry storage room. Food in dry storage room was stored in tight-lid food containers. Heavy accumulation of rodent droppings had be observed on food container lids (school had been closed for a week). Operator stated that food not affected as it had been stored in containers. Containers washed and sanitized, all dry storage items are currently stored in the walk-in cooler. Storage room empty at time of inspection.
      • **This is a temporary measure. Dry storage room is required for food operation. Address and correct rodent activity so that dry storage room can be used for its intended purposes. Food in storage must be protected from contamination at all times.
