- Observed operator replenish the reservoir from the sanitizer in the sink compartment
- Corrective Action(s): When refilling the reservoirs make a new solution from the mixer as the sanitizer should be warm (45 deg C) -see the sign posted at the sinks
- Refill the sanitizer and maintain concentrations >200ppm as per test strips

- Observation (CORRECTED DURING INSPECTION): One of the sanitizer bucket reservoir had ~0ppm QUAT concentration\
- NOTE: one of the QUAT dispensers took about 15seconds before adequate concentration was attained -ensure staff are waiting until this occurs and testing regularly with the test strips
- Corrective Action(s): QUAT sanitizer must be >200ppm
- Operator replaced the sanitizer

- Observation: Droppings observed in the dishpit area and area between the combo ovens and stove -some sort of exhaust/piping area to the ceiling -1 mouse caught in last pest control report in May
- Note operator indicated a possible pest entry
- Corrective Action(s): Check each morning for rodent activity taking cleaning measures where possible.
- Correct any measures recommended by your pest control

- Observation: A few mouse droppings observed in the dry storage room and in some floor areas of the kitchen:
- -on shelves of dry storage room such as the bags of peppper packets and floors (did not observe any tampered foods) -most of the lightly packaged foods (ie. soft plastic, paper, cardboard, nylon) observed in rodent proof containers
- -floor wall joint areas of kitchen a few droppings behind shelves/counters
- Corrective Action(s): Clean and sanitize all areas where droppings are observed (a high powered flashlight recommended when inspecting for droppings)-if the droppings are around the food cans or hard plastic foods then the exterior of the packages have to be sanitized as well
- Operator to send the next pest control report from Terminix (email) -they come on a monthly basis as per operator -live traps observed throughout

- Corrective Action(s): - Clean up all droppings and disinfect area. Monitor area for any further activity. If further activity noted (ie. droppings), clean up immediately. Have Pest Control Technician place trap in this area.
- - Ensure any spills from use of stand mixer are cleaned up so as not to attract pests.
