      • Observation (CORRECTED DURING INSPECTION): Sani-buckets (x2) in this department measured less than 100 ppm Quats residual. Both buckets of solution appeared clean, although both had wash cloths submerged in solution. Buckets changed hourly as per discussion. Possibly first fill of day and system hasn't primed properly?
      • Corrective Action(s): Solution changed in sani-buckets. Verified concentration at source to be 200 ppm.
      • Adjust procedures to include verification step at beginning of each day in this department. Verify with test strips concentration of quats solution is 200 ppm is reached and is maintained at source throughout the day.

      • Observation: Dirty pizza pans being stored on rack directly beside clean drying dishes and above box of parchment paper.
      • Corrective Action(s): Place parchment paper on rack above dirty trays and store trays on racks below drainboard to prevent accidental contamination.

      • 306 - Food premises not maintained in a sanitary condition [s. 17(1)]
      • Observation: Floors in freezer and under cooking equipment including deep fryer have a build up of grease or debris.
      • Corrective Action(s): Thoroughly clean and maintain these areas. Remove pallats from freezer and replace with a rack that has at least 6 inches of clearance underneath for cleaning. Ensure that staff are sanitizing their cutting boards regularly throughout the day between regular washing and sanitizing.

      • Observation (CORRECTED DURING INSPECTION): Observed clean and sanitized knives and trays being stored on a wet towel with food debris on it on the drainboard next to the sink.
      • Corrective Action(s): Ensure that all food equipment is air dried after cleaning and sanitizing to prevent contamination of bacteria. This has been noted on a previous inspection.
