- Dishes were not being sanitized after washing. The heat-sanitizing dishwasher was indicated as being not operable, meaning a chemical sanitization method would be required. Manual sanitizing method was described to operator during inspection. Ensure that all dishes and utensils are sanitized in 100ppm diluted bleach chlorine solution or equivalent food-grade sanitizing chemical after washing.
